Our cooking philosophy

Who said you can’t eat with culture? The culture is eaten.
Food is the main expression of culture, the most widespread, popular one.
Losing contact with food and its origin is losing one’s culture.
We strongly believe in this.
It is not true that the salad is all the same. There is salad and salad.
This motto can be repeated for every ingredient in the dishes we prepare.
Each dish is the result of research work aimed at obtaining exactly a desired and unique flavor.
What we want our food to have.
This is why we certainly do not skimp on the quality of the ingredients and do not make the choice of one or the other for simple economic reasons.
Indeed, hardly the least expensive is the right ingredient, because to be truly right an ingredient must not be compromised.
We know the origin of each ingredient and see how this is born and grows, we speak directly with the producer
and we want to be able to taste it before deciding it’s the right one.
From then on we guarantee ourselves, with the will to bring out the best from the best.
